Ingredients
  

Cookie Batter
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg optional
  • 0.75 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 2 eggs large
  • 2 tsp vanilla extract
  • 2 cups rolled oats
  • 1 cup blueberries
  • 1 tbsp cornstarch

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. Cream butter and sugars until fluffy, then add eggs and vanilla.
  4. Mix in dry ingredients until combined.
  5. Fold in oats and blueberries gently.
  6. Chill dough for 30 minutes.
  7. Scoop dough onto baking sheet and bake 12–15 minutes.
  8. Cool on rack before serving.

Notes

Chilling dough ensures thick cookies. Use frozen blueberries straight from freezer.
