  • 2 eggs room temperature
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
Mascarpone Filling
  • 8 oz mascarpone cheese room temperature
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp espresso or strong coffee

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x9 inch baking pan.
  2. Prepare brownie batter: In a bowl, combine melted butter and sugar. Beat in eggs and vanilla extract until smooth. Stir in cocoa, flour, salt, and baking powder until fully incorporated.
  3. Pour brownie batter into the prepared pan, smoothing the top with a spatula.
  4. Prepare mascarpone filling: In a separate bowl, whisk mascarpone cheese, powdered sugar, vanilla, and espresso until creamy.
  5. Drop spoonfuls of the mascarpone mixture over the brownie batter. Swirl gently with a knife to create a marbled effect.
  6. Bake for 28-32 minutes until the brownies are set but still slightly fudgy in the center. Allow to cool completely before cutting into squares.
