Ingredients
  

Pasta Base
  • 12 oz pasta
  • 2 cups cherry tomatoes halved
  • 4 cloves garlic minced
  • 3 tbsp olive oil
  • 4 oz goat cheese
  • 1/4 cup parmesan cheese grated
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp red pepper flakes optional
  • 1/4 cup pasta water reserved
  • fresh basil for garnish

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Combine tomatoes, garlic, olive oil, salt, and pepper in a baking dish.
  3. Place goat cheese in the center and roast for 25–30 minutes.
  4. Cook pasta according to package instructions and reserve pasta water.
  5. Mash roasted tomatoes and cheese into a creamy sauce.
  6. Add pasta and toss with sauce, adding pasta water as needed.
  7. Stir in parmesan, garnish with basil, and serve.

Notes

Use high-quality goat cheese for best flavor. Adjust seasoning to taste.
