- Heat olive oil in a saucepan. Add onion and cook 3–4 minutes until translucent. Stir in garlic.
- Add carrots, zucchini, bell pepper, and celery. Cook for 6–8 minutes until softened.
- Stir in crushed tomatoes, tomato paste, oregano, basil, salt, pepper, sugar, and broth.
- Simmer for 20–25 minutes until vegetables are tender.
- Blend the sauce until smooth using an immersion blender. Adjust seasoning.
- Serve immediately or store for later use.
Notes
Perfect for freezing and meal prep. Add a splash of cream for a richer sauce.
