Method
- Cook pasta in salted water until al dente; reserve 1/2 cup pasta water and drain.
- Season shrimp with salt, pepper, and paprika. Sauté in olive oil until pink, then remove.
- Sauté garlic, then add tomatoes and cook until softened.
- Add broth, lemon juice, and red pepper flakes; simmer briefly.
- Add spinach and stir until wilted.
- Return shrimp to skillet; add pasta and toss to coat.
- Use reserved pasta water to adjust sauce consistency; garnish and serve.
Notes
Adjust spice level with red pepper flakes. Add cream for a richer sauce.
