Toast Base
  • 4 slices crusty bread
  • 1 cup ricotta cheese
  • 2 tbsp olive oil
  • 1 clove garlic halved
  • 3 tomatoes sliced
  • 1 pinch salt
  • 1 pinch black pepper
  • 6 leaves fresh basil

Method
 

  1. Toast bread slices until golden and crisp.
  2. Rub toasted bread with garlic clove for flavor.
  3. Whip ricotta with olive oil until smooth and airy.
  4. Season ricotta with salt and pepper.
  5. Spread whipped ricotta over toast.
  6. Top with sliced tomatoes.
  7. Season and garnish with basil.
  8. Drizzle with olive oil and serve immediately.
