Ingredients
  

  • 1.5 cups fresh mango diced
  • 0.5 cup chia seeds
  • 2 cups coconut milk
  • 0.5 cup Greek yogurt or coconut yogurt
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp lime juice

Equipment

  • Mixing bowls
  • Blender
  • Glass jars or parfait glasses

Method
 

  1. Whisk coconut milk, chia seeds, maple syrup, and vanilla.
  2. Refrigerate 4 hours or overnight until thickened.
  3. Blend mango with lime juice until smooth.
  4. Layer chia pudding and mango puree in glasses.
  5. Chill briefly before serving.

Notes

Adjust sweetness to taste and add toppings just before serving.
