Ingredients

  • 1 cup fresh strawberries hulled and pureed
  • 1/2 cup light or coconut rum
  • 1/2 cup coconut water
  • 2 tbsp simple syrup or to taste
  • 1 tbsp lime juice optional
  • 2 sprigs fresh mint for garnish
  • 1 cup ice cubes for serving

Method
 

  1. Puree fresh strawberries in a blender until smooth.
  2. In a pitcher, combine strawberry puree, rum, coconut water, and simple syrup. Stir well.
  3. Add optional lime juice or soda if desired.
  4. Chill for 30 minutes before serving.
  5. Serve over ice in glasses, garnish with sliced strawberries and mint.

Notes

For a non-alcoholic version, replace rum with extra coconut water or sparkling water. Serve immediately for best flavor.
