- Preheat oven to 400°F (200°C). Rub potatoes with oil and salt, then bake 45–55 minutes until tender.
- Meanwhile, heat oil in a skillet and sauté onions, garlic, and peppers until soft.
- Add turkey and cook until browned, breaking it apart as it cooks.
- Stir in tomato sauce, ketchup, Worcestershire sauce, brown sugar, mustard, and spices. Simmer 8–10 minutes.
- Slice baked potatoes open, fluff insides, and top with turkey mixture, cheese, and parsley.
Notes
Use sweet potatoes for a sweeter twist. The sloppy joe mixture can be made ahead and frozen for up to 3 months.
