Ingredients
  

Baked Potatoes
  • 4 large russet potatoes
  • 1 tbsp olive oil
  • salt to taste
Turkey Sloppy Joe Filling
  • 1 lb lean ground turkey
  • 1 tbsp olive oil or butter
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 0.5 cup diced bell pepper optional
  • 1 cup tomato sauce
  • 0.25 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar or honey
  • 1 tsp yellow mustard
  • 0.5 tsp chili powder
  • 0.5 tsp smoked paprika
  • salt and black pepper to taste
Toppings
  • 1 cup shredded cheddar cheese
  • 2 tbsp chopped parsley or green onions

Method
 

  1. Preheat oven to 400°F (200°C). Rub potatoes with oil and salt, then bake 45–55 minutes until tender.
  2. Meanwhile, heat oil in a skillet and sauté onions, garlic, and peppers until soft.
  3. Add turkey and cook until browned, breaking it apart as it cooks.
  4. Stir in tomato sauce, ketchup, Worcestershire sauce, brown sugar, mustard, and spices. Simmer 8–10 minutes.
  5. Slice baked potatoes open, fluff insides, and top with turkey mixture, cheese, and parsley.

Notes

Use sweet potatoes for a sweeter twist. The sloppy joe mixture can be made ahead and frozen for up to 3 months.
