Ingredients
  

Salad Base
  • 3 cups cooked chicken breast diced or shredded
  • 1 cup plain Greek yogurt
  • 1 cucumber grated and squeezed dry
  • 1 clove garlic minced
  • 2 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 2 tbsp fresh dill chopped
  • 1 tbsp fresh parsley chopped
  • 0.25 cup red onion finely diced
  • 0.5 cup feta cheese crumbled
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp dried oregano

Method
 

  1. Grate the cucumber and squeeze out excess moisture using a clean kitchen towel.
  2. In a medium bowl, combine Greek yogurt, cucumber, garlic, lemon juice, olive oil, dill, parsley, oregano, salt, and pepper.
  3. Mix until the tzatziki dressing is creamy and well combined.
  4. Add cooked chicken, red onion, and feta cheese to the bowl.
  5. Gently stir until the chicken is evenly coated with dressing.
  6. Taste and adjust seasoning if needed.
  7. Cover and refrigerate for at least 15 minutes before serving.
  8. Serve chilled with pita bread, greens, or lettuce wraps.

Notes

For extra crunch, add diced cucumbers or toasted pita chips just before serving.
