Fries
  • 4 russet potatoes cut into fries
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 0.5 tsp paprika
Sausage Gravy
  • 0.5 lb breakfast sausage
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
Toppings
  • 1.5 cups cheese curds
  • 4 eggs
  • 1 tbsp butter or oil for frying eggs
  • 2 tbsp chopped chives

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss potato fries with olive oil, salt, pepper, garlic powder, and paprika.
  3. Spread fries in a single layer and bake 25–30 minutes until crispy.
  4. Cook breakfast sausage in a skillet until browned, then set aside.
  5. Add butter and flour to the skillet to create a roux, whisking for 1 minute.
  6. Slowly whisk in milk and simmer until gravy thickens.
  7. Return sausage to the gravy and season with pepper and garlic powder.
  8. Fry eggs in butter until whites are set but yolks remain runny.
  9. Place fries on a platter, top with cheese curds and hot gravy.
  10. Add fried eggs, garnish with chives, and serve immediately.

Notes

For extra crisp fries, soak cut potatoes in cold water for 30 minutes before baking.
