- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss potato fries with olive oil, salt, pepper, garlic powder, and paprika.
- Spread fries in a single layer and bake 25–30 minutes until crispy.
- Cook breakfast sausage in a skillet until browned, then set aside.
- Add butter and flour to the skillet to create a roux, whisking for 1 minute.
- Slowly whisk in milk and simmer until gravy thickens.
- Return sausage to the gravy and season with pepper and garlic powder.
- Fry eggs in butter until whites are set but yolks remain runny.
- Place fries on a platter, top with cheese curds and hot gravy.
- Add fried eggs, garnish with chives, and serve immediately.
Notes
For extra crisp fries, soak cut potatoes in cold water for 30 minutes before baking.
