Ingredients
  

Chocolate Sponge Cake
  • 4 eggs large, room temperature
  • 0.75 cup granulated sugar
  • 0.25 cup unsweetened cocoa powder
  • 0.5 cup all-purpose flour
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 1 tsp vanilla extract
Cream Filling
  • 1 cup heavy whipping cream cold
  • 0.25 cup powdered sugar
  • 1 tsp vanilla extract
Chocolate Ganache
  • 1 cup heavy cream
  • 8 oz dark chocolate chopped
  • 2 tbsp unsalted butter

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whip eggs and sugar until thick and pale.
  3. Fold in cocoa powder, flour, baking powder, salt, and vanilla.
  4. Spread batter evenly and bake 10–12 minutes.
  5. Roll warm cake in towel and cool completely.
  6. Whip cream with powdered sugar and vanilla.
  7. Fill, re-roll cake, and prepare ganache.
  8. Frost with ganache, texture, chill, and serve.

Notes

Roll cake while warm to prevent cracking.
