Ingredients
  

Soup Base
  • 2 lbs tomatoes halved
  • 1 onion sliced
  • 4 cloves garlic
  • 3 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp thyme
  • 2 cups vegetable broth
  • 0.5 cup heavy cream
  • 1 tbsp butter

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Arrange tomatoes, onion, and garlic on a baking sheet and season with oil, salt, pepper, and thyme.
  3. Roast for 30–35 minutes until caramelized.
  4. Blend roasted vegetables with broth until smooth.
  5. Transfer to pot, add butter, and simmer for 10 minutes.
  6. Stir in cream and simmer for 5 more minutes.
  7. Adjust seasoning and serve hot.
