Ingredients
  

Chicken Marinade
  • 2 chicken breasts boneless skinless
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic minced
  • 1 tsp oregano
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Salad
  • 6 cups mixed greens
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • 1 avocado diced
  • 0.25 red onion thinly sliced
  • 0.5 cup shredded carrots
  • 0.25 cup crumbled feta optional
Dressing
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey

Equipment

  • Grill or grill pan
  • Mixing bowls
  • Tongs
  • Knife and cutting board

Method
 

  1. Whisk marinade ingredients together in a bowl.
  2. Coat chicken in marinade and refrigerate at least 30 minutes.
  3. Preheat grill to medium-high heat.
  4. Grill chicken 5–6 minutes per side until fully cooked.
  5. Rest chicken 5 minutes, then slice.
  6. Combine salad ingredients in a large bowl.
  7. Whisk dressing ingredients until emulsified.
  8. Top salad with sliced chicken, drizzle dressing, and serve.

Notes

For extra flavor, marinate chicken up to 4 hours. Store dressing separately if meal prepping.
