Main Hash
  • 4 cups diced potatoes
  • 2 tbsp olive oil
  • 1 cup breakfast sausage crumbled
  • 1 onion diced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup cheddar cheese shredded
  • 4 eggs
  • 2 tbsp parsley chopped

Method
 

  1. Heat olive oil in a skillet over medium heat and cook potatoes until crispy.
  2. Add sausage and cook until browned.
  3. Stir in onion and peppers and cook until soft.
  4. Add garlic and seasoning, mixing well.
  5. Spread evenly and cook undisturbed for crisp texture.
  6. Top with cheese and crack eggs into wells.
  7. Cover and cook until eggs are set to preference.
  8. Garnish and serve hot.
