Ingredients
  

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar for crust
  • 1/2 cup unsalted butter melted
  • 16 oz cream cheese softened
  • 3/4 cup granulated sugar for filling
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground cloves
  • 1/4 tsp nutmeg

  • 8x8-inch baking pan
  • Mixing bowls
  • Hand mixer or stand mixer
  • Parchment paper

Method
 

  1. Preheat oven to 325°F (160°C). Line an 8x8 inch pan with parchment paper.
  2. Mix graham crumbs, sugar, and melted butter. Press into pan. Bake 8 minutes.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time.
  4. Mix in sour cream, vanilla, and chai spices. Pour filling over crust.
  5. Bake 35–40 minutes until edges set and center is slightly jiggly.
  6. Cool completely, then chill at least 3 hours before slicing into bars.

Notes

Dust with cinnamon before serving. Store in fridge for up to 5 days or freeze for 2 months.
