Method
- Preheat oven to 350°F (175°C). Grease and line an 8-inch cake pan with parchment paper.
- In a large mixing bowl, whisk together flour, almond flour, brown sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk almond milk, oil, and vanilla until well combined.
- Pour wet ingredients into dry ingredients and stir until just combined — do not overmix.
- Pour batter into the prepared cake pan and sprinkle sliced almonds evenly on top.
- Bake for 35–40 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and enjoy with coffee or tea ☕.
Notes
For extra sweetness, dust with powdered sugar before serving. You can also add a drizzle of vegan glaze for a fancier touch.
