Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 1/2 tsp ground ginger
  • 1 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 1/2 tsp salt
  • 1/2 cup coconut oil melted
  • 1/2 cup brown sugar
  • 1/2 cup molasses
  • 1 cup almond milk unsweetened
  • 2 tsp apple cider vinegar
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line a 9x5 loaf pan with parchment.
  2. Whisk flour, baking soda, baking powder, ginger, cinnamon, nutmeg, cloves, and salt in a bowl.
  3. In another bowl, whisk oil, brown sugar, molasses, almond milk, vinegar, and vanilla until smooth.
  4. Fold wet mixture into dry until just combined. Don’t overmix.
  5. Pour into loaf pan and bake 45–50 minutes, until toothpick comes out clean.
  6. Cool 10 minutes in pan, then transfer to rack. Optionally glaze or dust with powdered sugar.

Notes

Use dark molasses for best flavor. Loaf keeps well for several days and tastes even better the next day as the spices develop.
