Ingredients
  

Cheesecake Batter
  • 2 oz cream cheese softened
  • 1 tbsp unsalted butter softened
  • 1 tbsp almond flour
  • 1.5 tbsp erythritol sweetener granulated
  • 1 egg small
  • 0.5 tsp vanilla extract
  • 0.25 tsp lemon zest optional
  • 1 pinch salt

  • Fork or small whisk

Method
 

  1. Grease a microwave-safe mug lightly with butter.
  2. Add cream cheese and butter to the mug and mash until smooth.
  3. Stir in almond flour, sweetener, salt, and lemon zest.
  4. Mix in egg and vanilla extract until fully combined.
  5. Microwave on medium power for 60–90 seconds until just set.
  6. Let rest for 1–2 minutes before serving warm or chilled.

Notes

Do not overcook; cheesecake should be slightly jiggly in the center.
