Ingredients
  

Salad Base
  • 3 beets roasted and sliced
  • 1 cup blueberries fresh
  • 1/3 cup pistachios chopped
  • 1/4 cup mint leaves torn
  • 2 cups mixed greens
Dressing
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 1/2 tsp Dijon mustard optional
  • salt to taste
  • black pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C). Wrap beets in foil and roast until tender.
  2. Let beets cool, then peel and slice.
  3. Whisk together olive oil, lemon juice, honey, mustard, salt, and pepper.
  4. Place mixed greens in a large bowl.
  5. Add beets and blueberries on top.
  6. Sprinkle pistachios and mint leaves.
  7. Drizzle dressing over salad and toss gently.
  8. Serve immediately.

Notes

Add goat cheese for extra creaminess or quinoa for a heartier version.
