Ingredients
  

Salad
  • 4 cups red watermelon cubed
  • 4 cups yellow watermelon cubed
  • 1 cup feta cheese crumbled
  • 0.25 cup fresh mint leaves chopped
Dressing
  • 2 tbsp lime juice fresh
  • 2 tbsp olive oil
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper

Method
 

  1. Cube both red and yellow watermelon and place in a large bowl.
  2. Add chopped mint leaves and optional ingredients if using.
  3. Whisk together lime juice, olive oil, salt, and pepper.
  4. Pour dressing over watermelon and toss gently.
  5. Add crumbled feta cheese and lightly mix.
  6. Chill briefly if desired and serve fresh.

Notes

Best served fresh and chilled. Avoid overmixing to maintain texture.
