Ingredients
  

Cookie Dough
  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 0.75 cup brown sugar
  • 0.5 cup granulated sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 0.5 cup chopped pistachios
Pistachio Filling
  • 1 cup pistachio cream
  • 2 tbsp powdered sugar
  • 0.25 cup ground pistachios

Equipment

  • Mixing bowls
  • Baking sheet

  • Hand mixer or stand mixer

Method
 

  1. Prepare pistachio filling and freeze small portions.
  2. Preheat oven to 350°F (175°C).
  3. Mix dry ingredients together.
  4. Cream butter and sugars until fluffy.
  5. Add eggs and vanilla extract.
  6. Combine wet and dry ingredients.
  7. Fold in chocolate chips and pistachios.
  8. Stuff dough with frozen pistachio filling.
  9. Bake 12–15 minutes until golden.
  10. Cool and serve.

Notes

Freeze filling for best results and avoid overbaking for gooey centers.
