Method
- Slice dates open lengthwise and remove pits if needed.
- Fill each date with about 1 teaspoon peanut butter.
- Sprinkle chopped peanuts over peanut butter and press gently.
- Melt chocolate chips with coconut oil in microwave in 20-second intervals, stirring until smooth.
- Dip stuffed dates into melted chocolate and place on parchment-lined tray.
- Sprinkle with flaky sea salt and refrigerate 20–30 minutes until set.

Store refrigerated up to 1 week. Freeze up to 2 months for longer storage.
