Ingredients
  

Pasta
  • 1 lb penne pasta
Sauce
  • 2 tbsp olive oil
  • 1 shallot finely minced
  • 3 cloves garlic minced
  • 0.5 tsp red pepper flakes
  • 0.5 cup tomato paste
  • 0.25 cup vodka
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese freshly grated

Equipment

  • Large pot
  • Large skillet
  • Wooden spoon
  • Colander

Method
 

  1. Cook pasta in salted boiling water until al dente. Reserve pasta water and drain.
  2. Sauté shallot in olive oil until soft. Add garlic and red pepper flakes.
  3. Stir in tomato paste and cook until slightly darkened.
  4. Add vodka and simmer until reduced.
  5. Stir in cream and Parmesan. Simmer gently.
  6. Add pasta and reserved pasta water as needed. Toss and serve.

Notes

Adjust spice level to preference. Use reserved pasta water to adjust sauce consistency.
