Method
- Cook pasta in salted boiling water until al dente. Reserve pasta water and drain.
- Sauté shallot in olive oil until soft. Add garlic and red pepper flakes.
- Stir in tomato paste and cook until slightly darkened.
- Add vodka and simmer until reduced.
- Stir in cream and Parmesan. Simmer gently.
- Add pasta and reserved pasta water as needed. Toss and serve.
Notes
Adjust spice level to preference. Use reserved pasta water to adjust sauce consistency.
