Ingredients
  

Granita Base
  • 6 cups watermelon cubed and seedless
  • 0.33 cup granulated sugar
  • 2 tbsp lime juice fresh
  • 0.25 cup water
  • 1 tbsp honey or agave optional
Topping
  • 0.33 cup pistachios chopped
  • mint leaves optional

Method
 

  1. Blend watermelon until smooth.
  2. Strain mixture if desired for smoother texture.
  3. Heat sugar and water until dissolved, then cool.
  4. Mix watermelon puree, syrup, lime juice, and honey.
  5. Pour into shallow dish and freeze.
  6. Scrape with fork every 30 minutes until fluffy crystals form.
  7. Fold in pistachios and serve with garnish.

Notes

Adjust sweetness depending on watermelon ripeness. Best served fresh.
