- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

- Roast for 15–20 minutes until grapes soften and begin to caramelize.
- Whip ricotta cheese in a bowl or food processor until smooth and fluffy.
- Mix lemon zest and honey into the ricotta.
- Toast bread slices until golden and crisp.
- Spread whipped ricotta generously over each slice.
- Top with roasted grapes, drizzle with honey, and garnish with thyme.
- Serve immediately while warm.
