Ingredients
  

Ricotta Base
  • 1 cup ricotta cheese whole milk preferred
  • 1 tsp lemon zest
  • 1 tbsp honey
Roasted Grapes
  • 2 cups seedless red grapes
  • 1 tbsp olive oil
  • 0.25 tsp salt
  • 0.25 tsp black pepper
Toast Assembly
  • 4 slices artisan bread sourdough or country loaf
  • 1 tbsp honey for drizzling
  • 1 tbsp fresh thyme for garnish

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place grapes on the baking sheet, drizzle with olive oil, and sprinkle with salt and pepper.
  3. Roast for 15–20 minutes until grapes soften and begin to caramelize.
  4. Whip ricotta cheese in a bowl or food processor until smooth and fluffy.
  5. Mix lemon zest and honey into the ricotta.
  6. Toast bread slices until golden and crisp.
  7. Spread whipped ricotta generously over each slice.
  8. Top with roasted grapes, drizzle with honey, and garnish with thyme.
  9. Serve immediately while warm.

Notes

Add crushed pistachios or balsamic glaze for extra flavor.
