Method
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Whisk together flour, baking powder, and salt in a bowl.
- Cream butter and sugar until light and fluffy. Beat in eggs, orange zest, and vanilla.
- Gradually mix in dry ingredients until dough forms. Fold in cranberries and white chocolate.
- Divide dough into two logs and place on baking sheet.
- Bake 25–30 minutes until lightly golden. Cool 15 minutes.
- Slice logs and bake again at 325°F for 20–22 minutes, flipping halfway.
- Cool completely and drizzle with melted white chocolate if desired.
Notes
Biscotti become crunchier as they cool and store well for gifting.
