Ingredients
  

Cupcake Batter
  • 1.5 cups all-purpose flour
  • 0.75 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 2 eggs large
  • 1 cup milk or buttermilk
  • 0.5 cup vegetable oil
  • 2 tsp vanilla extract
  • 0.75 cup hot water or coffee
Snowflake Buttercream Frosting
  • 1 cup unsalted butter softened
  • 3 cups powdered sugar
  • 2 tsp vanilla extract
  • 2-3 tbsp heavy cream
  • 1 pinch salt

Method
 

  1. Preheat oven to 350°F (175°C). Line a cupcake tin with liners.
  2. Whisk together flour, cocoa powder, sugar, baking soda, baking powder, and salt.
  3. Combine eggs, milk, oil, and vanilla extract.
  4. Mix wet and dry ingredients together until just combined.
  5. Pour in hot water or coffee and mix until smooth.
  6. Fill cupcake liners 2/3 full with batter.
  7. Bake 18–22 minutes or until a toothpick comes out clean.
  8. Beat softened butter until fluffy. Add powdered sugar, vanilla, and cream; whip until smooth.
  9. Pipe frosting onto cooled cupcakes and decorate with snowflakes.

Notes

For whiter frosting, use clear vanilla extract.
