Ingredients
  

Marinade
  • 0.5 cup fresh orange juice
  • 2 tbsp lime juice
  • 0.25 cup olive oil
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 3 cloves garlic minced
  • 1 tsp chili flakes
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup fresh cilantro chopped
Steak
  • 1.5 lb skirt steak trimmed

Equipment

  • Mixing bowl

Method
 

  1. Whisk together all marinade ingredients in a bowl until well combined.
  2. Place skirt steak in a resealable bag and pour marinade over it.
  3. Marinate for at least 2 hours or overnight for best flavor.
  4. Remove steak, pat dry, and grill over high heat for 3–4 minutes per side.
  5. Let rest for 5 minutes, then slice against the grain and serve.

Notes

Avoid marinating more than 12 hours to prevent over-tenderizing. Slice thinly against the grain.
