- Place sliced onions in a large bowl and sprinkle with salt.
- Massage onions gently for 30–60 seconds to soften.
- Add sumac, olive oil, and lemon juice.
- Toss until evenly coated.
- Add black pepper and parsley, mix gently, and rest 5 minutes before serving.

Best served fresh but can be made up to 24 hours ahead.
