Zesty Sumac Onion Salad

Ingredients
  

  • 3 red onions thinly sliced
  • 2 tbsp ground sumac
  • 3 tbsp extra virgin olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp sea salt or to taste
  • 0.5 tsp black pepper
  • 0.5 cup fresh parsley chopped

Method
 

  1. Place sliced onions in a large bowl and sprinkle with salt.
  2. Massage onions gently for 30–60 seconds to soften.
  3. Add sumac, olive oil, and lemon juice.
  4. Toss until evenly coated.
  5. Add black pepper and parsley, mix gently, and rest 5 minutes before serving.

Notes

Best served fresh but can be made up to 24 hours ahead.
