Ingredients
  

  • 1 cup grated zucchini squeezed to remove excess moisture
  • 1/2 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter melted
  • 1 cup granulated sugar
  • 2 eggs room temperature
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x9 inch baking pan. Line with parchment paper for easy removal.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt. Set aside.
  3. In a separate bowl, beat melted butter and sugar until smooth. Add eggs and vanilla, mixing well.
  4. Fold in grated zucchini, then gradually mix in the dry ingredients until fully combined.
  5. Pour batter into prepared pan, smoothing the top. Bake for 25-30 minutes or until a toothpick comes out mostly clean.
  6. Cool completely before slicing into 16 squares. Serve as a healthy snack or dessert. 🍫🥒

Notes
