  • 2 zucchini spiralized
  • 1 lb shrimp peeled and deveined
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 lemon juiced and zested

  • Spiralizer
  • Tongs

Method
 

  1. Spiralize zucchini and pat dry.
  2. Cook shrimp in olive oil until pink, then remove.
  3. Melt butter and sauté garlic.
  4. Add broth and lemon, simmer briefly.
  5. Toss zucchini noodles in skillet.
  6. Return shrimp, combine, and serve.

Notes

Do not overcook zucchini to prevent sogginess.
